Easy Alkaline Salad

Cucumber Blueberry Quinoa Salad (Serves 2)


1 cup quinoa

2 cups Santevia water

1 cup cucumber

1 cup purple cabbage

1 cup blueberries

2 tbsp fresh, diced mint

¼ cup olive oil

Juice from ½ lime

Sea salt and pepper, to taste


Place quinoa and Santevia water in a small pot and cover with a lid. Turn to high heat and bring to a boil, immediately turn down to a simmer and set your timer for 20 minute.

Meanwhile, dice your cucumbers and cabbage and wash your blueberries. Place in a medium bowl and add mint. In a small bowl, combine oil, lime, salt, and pepper. Once quinoa is done, fluff with a fork and add to your vegetables. Top with the dressing and gently mix to combine. Serve warm or cold.
