Healing Ginger Carrot Soup (Serves 2)


2 cups vegetable stock

4 carrots, washed and peeled

½ onion, quartered

1 tbsp fresh ginger

2 garlic cloves

1 tsp turmeric

Sea salt and pepper, to taste


Place all ingredients in a large pot. Bring to a boil, then turn to a simmer for 1 hour. Once carrots are soft, use your immersion blender to blend until smooth. Sprinkle hemp hearts on top if desired.
